Little slices from a big machine
In Germany, the famous schnitzel or 'little slice' has always been a consumer favourite and demand for all kinds of schnitzels is a high as ever. Lutz Fleischwaren has been established for more than 100 years, with seven factories supplying boiled and cooked sausages, bacon, ham, salami, convenience foods, canned meats and, of course, schnitzels, to retailers, caterers, hotels, restaurants and institutions throughout Europe. The company employs more than 2,000 people and, with a sales turnover exceeding DM506 million, stands as one of the biggest companies in the European meat products market.
At their factory in Hammelburg, Lutz produces breaded schnitzels at the rate of 650 kgs per hour, with the aid of an AEW THURNE APC Slicer and a frying system.
Customers demand a vast range of portion weights at very short notice, so APC has to perform with speed and accuracy - constantly and reliably.
With such critical production deadlines to meet, Lutz had to be absolutely sure of making the right decision and tested three different slicers before deciding on AEW THURNE's machine.
"The scan-adjust-slice system more than met the accuracy required by Lutz and proved that APC really was the best machine available to do the job," said Dieter Stol.
"Meeting urgent orders is no problem and, even more importantly, we can achieve the consistent quality of cut that is so important with this type of product. The machine is reliable and easy to operate too. We now need to look at ways of increasing output from the fryer because it has difficulty in matching the speed of APC slicer."
